Other than Double Stranding being is visual difference, it also provides a more uniformed look to the finished project. The colours stay in sequence. If double stranding with two yarn being wrapped the same time, the stitches are slightly looser but also the colours can appear to be more unorganized. For most of us, the visual difference may not matter between the two. However, if the yarn ball has a really nice appearance, you may want to double wrap over doubles stranding.
